One of my favorite recipes for when I feel like binging on french fries because it's just been one of those days.
Baked Zucchini Fries
ingredients
2 zucchini, each cut into 16 wedges
3 large egg whites
1/2 t salt
directions
Preheat oven to 500° F. In a large bowl, beat egg whites until stiff and florthy. Add the zucchini wedges and toss to coat. Let sit for 5 minutes.
Arrange zucchini, cut side down, on baking sheet covered in foil and sprayed with cooking spray. Bake the wedges, turning once, for about 15 minutes. Let stand for about a minute before serving.

Okay, and it was one of those days today... :) I made these tonight for dinner, here's a pict. And you know what, skip the turning. I didn't bother turning them and they were fine.

I'm sold. We've got bunch of zucchini in the fridge right now, so that's the plan for dinner tomorrow.
The recipe was enticing, but the pics just really sealed the deal. ;)

It looks too healthy IMO!! Ellen and I are doing WW'ers to trim a few right now, so even though I didn't see any grease dripping off those babies, we'll give it a try. :cheerful:

OK, I did them and HAD to turn them so they weren't mushy on one side. They turned out really good and were filling. Very good, thanks for the recipe! ;)

I have started making them in the oven instead of my Fry Daddy. I guess that's an improvement. Baby steps. I'll be adventurous and try Zucchini fries one day.
